Ingredients

  1. 1 large green/yellow zucchini
  2. 1 tbsp of olive oil
  3. 1 lemon
  4. 8-10 walnuts, crushed
  5. 1-2 garlic cloves
  6. 8-9 basil leaves
  7. 1-2 tsp thyme
  8. Salt, to taste

Instructions

  1. Wash the zucchini and peel it. With the peeler, make ribbons of the zucchini.
  2. In a saucepan, add olive oil, garlic cloves slightly crushed, skin of 1 lemon and thyme. Cook it for 8 minutes. Let it cool.
  3. Remove garlic and lemon peel from the olive oil.
  4. Add olive oil infusion to the zucchini ribbons. Top it up with basil, crushed walnuts, lemon juice and salt.
