Ingredients
- 1 large green/yellow zucchini
- 1 tbsp of olive oil
- 1 lemon
- 8-10 walnuts, crushed
- 1-2 garlic cloves
- 8-9 basil leaves
- 1-2 tsp thyme
- Salt, to taste
Instructions
- Wash the zucchini and peel it. With the peeler, make ribbons of the zucchini.
- In a saucepan, add olive oil, garlic cloves slightly crushed, skin of 1 lemon and thyme. Cook it for 8 minutes. Let it cool.
- Remove garlic and lemon peel from the olive oil.
- Add olive oil infusion to the zucchini ribbons. Top it up with basil, crushed walnuts, lemon juice and salt.
