Ingredients

  1. 1/2 bowl quinoa
  2. 1 red or yellow bell pepper
  3. 50-60g feta cheese
  4. 1-2 tsp oregano
  5. 1 lemon
  6. Salt, to taste

Instructions

  1. Wash the quinoa thoroughly. In a saucepan, add quinoa with a little less than one bowl of water.
  2. Cook on medium heat and bring it to a boil. Let it simmer on low heat for the next 15 minutes. Take it off the heat and let it sit for 10 minutes.
  3. Once the quinoa is cool, refrigerate for an hour.
  4. Wash and chop the bell pepper finely. If you like a crunchy salad, don’t cook the bell pepper. If not, add a teaspoon of olive oil in a pan and cook for 5-10 minutes till soft.
  5. In a large bowl, mix quinoa, bell pepper and cubes of feta cheese. Season with oregano, lemon juice and salt. Mix well.
  6. Serve cold.

<aside> 💡 You can add any vegetable of your choice, or more vegetables if you like! This pairs really well with eggplant as well. If I have some lettuce, I also chop the leaves finely and add those for a bit of colour.
