Ingredients
- 1/2 bowl quinoa
- 1 red or yellow bell pepper
- 50-60g feta cheese
- 1-2 tsp oregano
- 1 lemon
- Salt, to taste
Instructions
- Wash the quinoa thoroughly. In a saucepan, add quinoa with a little less than one bowl of water.
- Cook on medium heat and bring it to a boil. Let it simmer on low heat for the next 15 minutes. Take it off the heat and let it sit for 10 minutes.
- Once the quinoa is cool, refrigerate for an hour.
- Wash and chop the bell pepper finely. If you like a crunchy salad, don’t cook the bell pepper. If not, add a teaspoon of olive oil in a pan and cook for 5-10 minutes till soft.
- In a large bowl, mix quinoa, bell pepper and cubes of feta cheese. Season with oregano, lemon juice and salt. Mix well.
- Serve cold.

💡 You can add any vegetable of your choice, or more vegetables if you like! This pairs really well with eggplant as well. If I have some lettuce, I also chop the leaves finely and add those for a bit of colour.
