Ingredients

  1. 100g arugula leaves (also called rocket leaves)
  2. 1 medium safeda or banganapalli mango
  3. 1/2 ball of burrata cheese
  4. 2 tbsp sweet and sour chilli sauce

Instructions

  1. Wash the arugula leaves thoroughly. Remove the stems.
  2. Cut the mango into cubes.
  3. In a bowl, toss the arugula leaves and mango with the sweet and sour chilli sauce. Transfer to a plate.
  4. Tear the burrata cheese and garnish the salad.

<aside> 💡 Mango and cheese pairing: Safeda mango, which is slightly sweet and sour, pairs well with burrata cheese which has a more neutral flavour. If you’re using other sweeter mango varieties like Alfonso, consider replacing the burrata cheese with feta cheese to balance the salad.
